evaluaci\u00f3n de la contaminaci\u00f3n microbiol\u00f3gica de las canales de porcino en la fase final del proceso de obtenci\u00f3n (antes del enfriado) en un matadero industrial ubicado en la provincia de ja\u00e9n.     tanto las canales como las superficies del matadero muestreadas cumplieron con el criterio \u00absatisfactorio\u00bb establecido en el reglamento (ce) 2073\/2005 y en la final rule (pr\/haccp) de 25 de julio de 1996 (usda, 1996) para los recuentos microbianos en las canales y con la decisi\u00f3n 2001\/1471\/ce para el control de las superficies del matadero, existiendo una estrecha relaci\u00f3n entre el nivel de contaminaci\u00f3n presente en las superficies antes de iniciar el proceso de sacrificio y el estado microbiol\u00f3gico final de las canales (r=0,594(p mayor 0,10) para el recuento de bacterias aerobias, r=0,805 (p mayor 0,01) para el recuento de enterobacterias y r=0,811 (p mayor 0,01) para el recuento de enterobacterias en superficies de matadero y e.Coli en la superficie de las canales). no se detectaron campylobacter spp.Y escherichia coli o157:h7 en ninguna de las superficies externas e internas de las canales analizadas.     sin embargo salmonella spp., Se detect\u00f3 en el 13,3%, 10,95=[0,033; 0,232], de las superficies internas de las canales muestreadas y en el 2,2%, 10,95=[0,000: 0,064], de las superficies externas y listeria monocytogenes se detect\u00f3 en el 33,3%, 10,95=[0,195; 0,470], de las superficies internas de las canales y en el 4,4%, 10,95=[0,000: 0,103], de las superficies externas.     el origen de la contaminaci\u00f3n de las canales con salmonella spp apunt\u00f3 el proceso de flagelado y eviscerado, mientras que el origen de listeria monocytogenes en las canales fue el ambiente del matadero siendo la operaci\u00f3n de esquinado la que m\u00e1s contribuy\u00f3 con un 70% de las superficies del matadero contaminadas con este microorganismo.     los resultados obtenidos muestran la
