Por un lado, ciertas aminas contaminantes y\/o impurezas en edulcorantes y, por otro, las aminas bi\u00f3genas que se generan a partir de los amino\u00e1cidos proteicos. Las metodolog\u00edas anal\u00edticas empleadas han sido el an\u00e1lisis por inyecci\u00f3n en flujo (fia) y la cromatograf\u00eda de l\u00edquidos de alta resoluci\u00f3n (hplc); en ambos casos la detecci\u00f3n se ha basado en la absorci\u00f3n molecular uv-visible de los analitos.     los m\u00e9todos (fia) pueden ser una alternativa a los m\u00e9todos cromatogr\u00e1ficos y electrofer\u00e9ticos para la determinaci\u00f3n multicomponente de determinados analitos. En esta tesis se han establecido diferentes m\u00e9todos fia para la determinaci\u00f3n simult\u00e1nea de anilina y ciclohexilamina en edulcorantes comerciales que contienen ciclamato usando el 1,2-naftoquinona-4-sulfonato de sodio (nqs) como reactivo derivatizante. Tambi\u00e9n se ha establecido un m\u00e9todo fia para la determinaci\u00f3n r\u00e1pida de histamina en vinos.     para la optimzaci\u00f3n de las condiciones experimentales se han utilizado t\u00e9cnicas quimiom\u00e9tricas tales como el dise\u00f1o factorial y la optimizaci\u00f3n multicriterio. Por otro lado, cuando no se ha podido alcanzar una selectividad total, se han utilizado m\u00e9todos quimiom\u00e9tricos para el an\u00e1lisis de los datos.     por \u00faltimo, se ha propuesto un m\u00e9todo de hplc con derivatizaci\u00f3n post-columna con el reactivo nqs para la determinaci\u00f3n de aminas bi\u00f3genas en vinos.
