{"id":54270,"date":"2018-03-09T22:42:00","date_gmt":"2018-03-09T22:42:00","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/empleo-de-componentes-del-aroma-para-la-caracterizacion-de-mieles-monoflorales\/"},"modified":"2018-03-09T22:42:00","modified_gmt":"2018-03-09T22:42:00","slug":"empleo-de-componentes-del-aroma-para-la-caracterizacion-de-mieles-monoflorales","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/quimica-organica\/empleo-de-componentes-del-aroma-para-la-caracterizacion-de-mieles-monoflorales\/","title":{"rendered":"Empleo de componentes del aroma para la caracterizaci\u00f3n de mieles monoflorales"},"content":{"rendered":"<h2>Tesis doctoral de <strong>  Gallardo Madue\u00f1o Mar\u00eda  Concepci\u00f3n <\/strong><\/h2>\n<p>El presente trabajo de investigaci\u00f3n se ha realizado sobre un total de 38 muestras de miel monofloral de distintos or\u00edgenes bot\u00e1nicos -9 muestras de miel de azahar, 10 muestras de miel de tomillo, 10 muestras de miel de eucalipto y 9 muestras de miel de romero-procedentes de diferentes regiones ap\u00edcolas de la comunidad aut\u00f3noma de andaluc\u00eda y correspondientes a las cosechas de los a\u00f1os 2002, 2003 y 2004; con el fin de llevar a cabo su caracterizaci\u00f3n en base al estudio de los compuestos vol\u00e1tiles responsables del aroma, para poder establecer una posible diferenciaci\u00f3n entre estas mieles monoflorales andaluzas.     se aislaron e identificaron terpenos, norisoprenoides, derivados de los bencenos, productos procedentes de la reacci\u00f3n de maillard y compuestos alif\u00e1ticos en todas las muestras de miel analizadas.     los resultados obtenidos permiten definir perfiles arom\u00e1ticos para la mayor\u00eda de los tipos estudiados:     en las mieles de azahar se identifican un total de 43 compuestos vol\u00e1tiles diferentes. De todo ellos s\u00f3lo 10 fueron considerados como posibles marcadores del origen bot\u00e1nico y\/o geogr\u00e1fico pare estas mieles: lilac alcoholes (derivados de linalool) y oxido de limoneno, cis- (terpenos); 3-oxo-a-ionona y dehidrovomifoliol (norisoprenoides) y los derivados de los bencenos, 2,4-ditertbutilfenol y 3,5-dimetoxi&#8212;-4-benzohidracida. En todas las muestras analizadas se identifica el alcaloide cafe\u00edna.     un total de 35 compuestos vol\u00e1tiles diferentes se obtienen para mieles de tomillo. S\u00f3lo 12 pueden ser considerados como posibles marcadores del origen bot\u00e1nico y\/o geogr\u00e1fico; limoneno y eucarvona (terpenos); 4-oxo-isoforona y dehidrovomifoliol (norisoprenoides) y los derivados de los bencenos \u00e1cido benzoico, \u00e1cido benzoico, \u00e1cido benceniac\u00e9tico, trimetilfenol, bencenoetanol, a-(feniletil)-, p-hidroxifenil acetonitrilo, 2,4-ditertbutilfenol y 1,2,3-trimetoxi-5-(metoximetil)benceno.
