Se observ\u00f3 que las levaduras muestran un mejor comportamiento frente a la oxidaci\u00f3n de alcoholes y los hongos filamentosos a la reducci\u00f3n de compuestos carbonilicos. Las levaduras seleccionadas fueron: pachysolen tannophilus williopsis saturnus, williopsis californica. Su crecimiento celular se sigui\u00f3 por incremento de absorbencia a 660 nm observando su comportamiento en distintas fases del mismo. Los hongos seleccionados fueron; monascus kaoliang y diplogelasinospora grovesii; su crecimiento se sigui\u00f3 por el incremento del peso seco de su masa celular.
