T\u00e9cnicas de extracci\u00f3n de los compuestos vol\u00e1tiles de uvas y mostos  &#8211; se ha comparado la capacidad de extracci\u00f3n de los compuestos vol\u00e1tiles de mostos de las t\u00e9cnicas de extracci\u00f3n en fase s\u00f3lida (spe), y extracci\u00f3n y destilaci\u00f3n simult\u00e1neas (sde) con la de la extracci\u00f3n l\u00edquido-l\u00edquido (lle). todas las t\u00e9cnicas permitieron la identificaci\u00f3n y cuantificaci\u00f3n de un n\u00famero suficiente de compuestos del aroma de los motos como para permitir su caracterizaci\u00f3n. La t\u00e9cnica de sde present\u00f3 como ventajas la utilizaci\u00f3n de un menor volumen de disolvente y un menor tiempo de extracci\u00f3n aunque present\u00f3 una baja recuperaci\u00f3n de los compuestos m\u00e1s polares y la formaci\u00f3n de artefactos. &#8211; la t\u00e9cnica de hs-spme puede ser utilizada como m\u00e9todo r\u00e1pido y eficaz de determinaci\u00f3n de la madurez arom\u00e1tica de las uvas utilizando una fibra de pdms\/dvb expuesta durante 20 minutos al espacio de cabeza de la muestra calentada a 70\u00c2\u00bac. cap\u00edtulo ii. T\u00e9cnicas de mejora del aroma de los vinos blancos j\u00f3venes. se ha estudiado la influencia de diferentes t\u00e9cnicas de potenciaci\u00f3n del aroma primario de los vinos entre las que destacan el estado de madurez de la vendimia, el uso de enzimas glicosid\u00e1sicas y la maceraci\u00f3n pre-fermentativa. los vinos elaborados con la variedad de uva riesling presentaron elevadas concentraci\u00f3n de compuestos terp\u00e9nicos y c13-norisoprenoides libres y glicos\u00eddicamente ligados.
