Aspergillus y penicillium) que pueden infectar los cereales durante su crecimiento, cosecha o almacenamiento, las especies de fusarium producen un gran n\u00famero de metabolitos secundarios t\u00f3xicos denominados como fusariotoxinas. Las fusariotoxinas componen una familia de micotoxinas estrog\u00e9nicas, fumonisinas y toxinas emergentes como la moniliformina, tomando en cuenta la estructura qu\u00edmica, sus propiedades cromatogr\u00e1ficas y los mecanismos de acci\u00f3n.
