Para ello se han seguido dos l\u00edneas de investigaci\u00f3n: la primera ha consistido en una hidr\u00f3lisis en un reactor discontinuo con enzimas comerciales (alcalasa, neutrasa, flavourzyme y protamex) resultado la alcalasa la que ha presentado una mayor eficacia (grado de hidr\u00f3lisis obtenido por gramos de enzima). Con esta enzima se ha estudiado la influencia de diversas variables: concentraci\u00f3n inicial de sustrato (5-15 g\/l), concentraci\u00f3n inicial de enzima (0,48-4,8 ua\/l), temperatura (40-60 \u00c2\u00bac), ph (7-10) y tiempo. Se ha determinado la cin\u00e9tica de la reacci\u00f3n y se ha propuesto un mecanismo de reacci\u00f3n que considera cierta desactivaci\u00f3n de la enzima as\u00ed como inhibici\u00f3n por los productos de la misma. La segunda l\u00ednea de investigaci\u00f3n ha consistido en una hidr\u00f3lisis con agua en condiciones subcr\u00edticas en un reactor discontinuo. Las condiciones \u00f3ptimas de operaci\u00f3n son 250 \u00c2\u00bac, 60 minutos y con una concentraci\u00f3n inicial de sustrato de 10 g\/l.  Tambi\u00e9n se ha propuesto un modelo cin\u00e9tico simplificado y general que describe satisfactoriamente la reacci\u00f3n y que considera que la prote\u00edna se hidroliza siguiendo una reacci\u00f3n consecutiva dando lugar a amino\u00e1cidos, los cuales se descomponen en diferentes productos de degradaci\u00f3n. Ambos tipos de hidr\u00f3lisis suponen un tratamiento adecuado para el pelo de cerdo sin incrementar considerablemente los costes de elaboraci\u00f3n de la canal. Su utilizaci\u00f3n depende de los productos que se pretendan obtener: con la hidr\u00f3lisis subcr\u00edtica se consigue una mayor eliminaci\u00f3n del pelo (99 %) y se obtiene una recuperaci\u00f3n de amino\u00e1cidos m\u00e1s alta que con la enzim\u00e1tica aunque el perfil de amino\u00e1cidos es m\u00e1s reducido y el hidrolizado obtenido no es susceptible de ser utilizado como fuente proteica
