Actualmente, la mayor\u00eda de sistemas de recolecci\u00f3n de la sangre no utilizan unas medidas de higiene estrictas, por lo que \u00e9sta se convierte en un producto de baja calidad microbiol\u00f3gica. Consecuentemente, su aprovechamiento resulta poco estimulante desde el punto de vista econ\u00f3mico, puesto que las cualidades que permiten la obtenci\u00f3n de productos de alto valor a\u00f1adido suelen perderse. con el fin de mejorar el inter\u00e9s por su valorizaci\u00f3n, convendr\u00eda implementar un sistema sencillo y poco costoso que asegurase la calidad de la sangre durante su recolecci\u00f3n y almacenaje. Asimismo, convendr\u00eda potenciar la obtenci\u00f3n de productos derivados de la sangre mediante el aprovechamiento de sus propiedades funcionales en lo que se refiere a la producci\u00f3n de ingredientes alimenticios. el cap\u00edtulo i se incluye dentro de un proyecto que propone la utilizaci\u00f3n de bacterias del \u00e1cido l\u00e1ctico como cultivo bioconservador de la sangre, un sistema sencillo y de bajo coste para lograr la estabilidad de la sangre, tanto microbiol\u00f3gica como fisicoqu\u00edmica, durante su almacenaje.  en primer lugar, se llev\u00f3 a cabo la identificaci\u00f3n de una colecci\u00f3n de cepas de bacterias l\u00e1cticas mediante m\u00e9todos genot\u00edpicos. Estas cepas hab\u00edan sido aisladas anteriormente en tanques de recolecci\u00f3n de sangre, y se hab\u00eda estudiado su capacidad antagonista frente a ciertos microorganismos indicadores. Su identificaci\u00f3n estableci\u00f3 que la diversidad de cepas lab presentes en las instalaciones correspond\u00eda \u00fanicamente a la siguientes especies: lactococcus garvieae, lactobacillus reuteri, lactobacillus murinus, enterococcus raffinosus, enterococcus dispar, enterococcus hirae, lactobacillus mucosae y streptococcus bovis. Las cuatro primeras agrupaban el 95% de todas las colonias aisladas y se hallaban igualmente distribuidas en todas las instalacion<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
