Este pardeamiento pude producir cambios importantes tanto en la apariencia (colores oscuros) como en las propiedades organol\u00e9pticas de vegetales comestibles. Adem\u00e1s suele ir asociado al desprendimiento de olores y efectos negativos sobre el valor nutricional. Las reacciones de oxidaci\u00f3n que provocan el pardeamiento de frutos y vegetales son de origen enzim\u00e1tico y est\u00e1n catalizadas principalmente por la enzima polifenol oxidasa (ppo), siendo su actividad particularmente alta en aquellos frutos y vegetales que contienen altos niveles de compuestos polifen\u00f3licos. Numerosos esfuerzos se han dedicado a prevenir o disminuir la actividad ppo en vegetales y frutos, especialmente durante el procesamiento post-cosecha. Sin embargo estos estudios se han visto dificultados por las caracter\u00edsticas intr\u00ednsecas de los materiales biol\u00f3gicos de partida, con concentraciones elevadas de fenoles y, en muchos casos, una actividad polifenol oxidasa elevada que provoca un pardeamiento r\u00e1pido de los extractos que dificulta la purificaci\u00f3n, el estudio cin\u00e9tico y la caracterizaci\u00f3n de las actividad polifenol oxidasa de diferentes  fuentes vegetales. Por ello, la purificaci\u00f3n y caracterizaci\u00f3n de ppo de diferentes fuentes vegetales es un paso fundamental para investigar la participaci\u00f3n y mecanismos de actuaci\u00f3n de esta enzima en estos procesos. El objetivo de esta tesis doctoral es estudiar la implicaci\u00f3n de la enzim\u00e1tico ocasionado de forma natural o por da\u00f1os mec\u00e1nicos.
