La aplicaci\u00f3n de m\u00e9todos espectrosc\u00f3picos (nir, mir, raman, de rmn tanto de 1h como de 13c) y las t\u00e9cnicas de sirms (espectrometr\u00eda de masas de is\u00f3topos estables, del ingl\u00e9s \u00abstable isotope radio mass spectrometry\u00bb, combinados con el empleo de procedimientos estad\u00edsticos asistidos por ordenador, son las t\u00e9cnicas emergentes en el campo de la qu\u00edmica de la calidad del aceite de oliva.     esta tesis doctoral versa sobre la \u00abaplicaci\u00f3n de las t\u00e9cnicas de sirms y rmn (de 1h y 13c) a la trazabilidad del aceite de oliva\u00bb y se engloba dentro del \u00e1rea prioritaria \u00abcalidad de la producci\u00f3n, trazabilidad y seguridad alimentarias\u00bb del vi programa marco de la uni\u00f3n europea. Se han puesto a punto m\u00e9todos de sirms para el carbono y el ox\u00edgeno en aceites, se comparan los resultados de las t\u00e9cnicas nir, mir, raman y de rmn para el calculo del perfil \u00e1cidos grasos con los que proporciona la t\u00e9cnica de referencia (cromatograf\u00eda de gases) y se discute la aplicaci\u00f3n de la rmn de 13c para calcular la distribuci\u00f3n de \u00e1cidos grasos entre las posiciones 1,3 y 2 del glicerol. el trabajo contribuir\u00e1 a generar una base de datos muy amplia aplicable a la trazabilidad del aceite de oliva, similar a la ya
