Con el objetivo de mejorar la seguridad de los embutidos crudos-curados, se valor\u00f3 la aplicaci\u00f3n del tratamiento por alta presi\u00f3n hidrost\u00e1tica y la adici\u00f3n de cultivos iniciadores en embutidos poco \u00e1cidos (fuet y chorizo). Por otro lado, para a reducir el riesgo de l. Monocytogenes durante la conservaci\u00f3n del jam\u00f3n cocido loncheado, se avalu\u00f3 el efecto combinado de la adici\u00f3n de antimicrobianos naturales (lactato-diacetato y enterocinas), a\u00f1adidos directamente o a trav\u00e9s del envasado antimicrobiano, y el tratamiento por alta presi\u00f3n hidrost\u00e1tica.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
