Para la realizaci\u00f3n del estudio se ha llevado a cabo la identificaci\u00f3n y clonaci\u00f3n de los genes responsables de la producci\u00f3n de tiramina, estudio de los factores y mecanismos de regulaci\u00f3n a que est\u00e1n sometidos, as\u00ed como la caracterizaci\u00f3n transcripcional del correspondiente oper\u00f3n. As\u00ed, del presente trabajo puede concluirse que un valor de ph \u00e1cido en conjunci\u00f3n con elevadas concentraciones de tirosina, originan una activaci\u00f3n transcripcional de los genes del cluster tdc. Por otro lado, se ha desarrollado un m\u00e9todo r\u00e1pido de detecci\u00f3n de cepas potencialmente productoras de aminas bi\u00f3genas, basado en la reacci\u00f3n en cadena de la polimerasa, que puede ser aplicado al an\u00e1lisis de cultivos iniciadores y\/o muestras de alimentos durante las diferentes etapas del proceso fermentativo para prevenir la acumulaci\u00f3n de aminas bi\u00f3genas en alimentos.  la calidad del trabajo queda patente por la publicaci\u00f3n hasta el momento de cinco de los seis cap\u00edtulos de los que se compone la tesis en revistas de elevado \u00edndice de impacto en las \u00e1reas sci \u00abjournal of food protection\u00bb y \u00abjournal of dairy research\u00bb,  \u00abapplied microbiology and biotecnology\u00bb.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos
