Chev., C. F. Liang y a. R. Ferguson) y de la fresa (fragaria x ananassa, duch.). En el caso del kiwi, almacenado en c\u00e1mara, se ha comprobado la influencia de tres tipos de cultivo (convencional, ecol\u00f3gico e integrado), utilizando el modelo de anova con medidas repetidas split-splot. En el caso de la fresa, se ha estudiado la influencia de dos tipos de cultivo (convencional y ecol\u00f3gico) en varios muestreos, utilizando un dise\u00f1o en bloque completo al azar. los kiwis procedentes del cultivo convencional presentan mayores concentraciones de s\u00f3lidos solubles, vitamina c, k, mg, fe, zn y mn y las menores concentraciones de \u00e1cido m\u00e1lico, \u00e1cido ox\u00e1lico y cenizas. Los kiwis procedentes del cultivo ecol\u00f3gico presentan las mayores concentraciones de \u00e1cido c\u00edtrico y \u00e1cido qu\u00ednico. Los kiwis procedentes del cultivo integrado presentan caracter\u00edsticas intermedias a las procedentes de los otros dos sistemas de cultivo. las fresas procedentes del cultivo convencional presentan las mayores concentraciones de s\u00f3lidos solubles, materia seca, par\u00e1metros de color cie (l*a*b*), \u00e1cido c\u00edtrico, \u00e1cido qu\u00ednico, cenizas, na, k, ca y fe. Las fresas procedentes del cultivo ecol\u00f3gico presentan las mayores concentraciones de vitamina c y li. se han optimizado los procesos de elaboraci\u00f3n de kiwi en alm\u00edbar y de mermelada de fresa, elabor\u00e1ndose ambos productos utilizando dos tipos de materia prima (procedente del cultivo convencional y ecol\u00f3gico) y dos tipos de procedimiento de elaboraci\u00f3n (convencional y ecol\u00f3gico). en los productos obtenidos se ha evaluado la influencia del proceso de elaboraci\u00f3n sobre las caracter\u00edsticas f\u00edsico-qu\u00edmicas de las materias primas de partida, utilizando el test t-student, observ\u00e1ndose que \u00e9stas var\u00edan de forma significativa. adem\u00e1s, se ha estudiado la influencia de la materia prima (convencional y ecol\u00f3gica)
