La explotaci\u00f3n integral de las materias primas y la minimizaci\u00f3n de residuos son aspectos claves. En zonas de alta producci\u00f3n agraria y\/o forestal  se generan subproductos que contienen una gran variedad de compuestos bioactivos, de inter\u00e9s alimentario y m\u00e9dico, que en la mayor\u00eda de los casos no se aprovechan. en esta tesis doctoral se pretende aprovechar un subproducto forestal, corteza de pino, como fuente de compuestos polifen\u00f3licos que posean propiedades antioxidantes. La corteza de pino contiene fundamentalmente procianidinas; su papel antioxidante, tanto en alimentos como en el organismo, es objeto en la actualidad de numerosos estudios. a lo largo de la memoria, tras una revisi\u00f3n sobre los antioxidantes y sus funciones, se aborda un trabajo de investigaci\u00f3n en el que partiendo de los extractos crudos de corteza de pino, se lleva a cabo un fraccionamiento con el fin de separar fracciones de un mismo perfil polifen\u00f3lico, identificando sus componentes y caracteriz\u00e1ndolos en cuanto a poder antioxidante. Se realiza una primera selecci\u00f3n, y las fracciones correspondientes se aplican a modelos alimentarios (aceites y emulsiones), realizando oxidaciones aceleradas en las que se pondr\u00e1 de
