En el primer estudio, se evalu\u00f3 el contenido en inositoles fosfato y el de minerales fundamentales en la nutrici\u00f3n (fe, ca y zn) de estas papillas y de sus materias primas. En el segundo estudio, se evalu\u00f3 el efecto del procesado tecnol\u00f3gico (tostado y adici\u00f3n de alfa-amilasa) y de la adici\u00f3n de fitasa de aspergillus sobre el contenido en inositoles fosfato. En el tercer estudio, se evalu\u00f3 la disponibilidad mineral de estas papillas para determinar el efecto del \u00e1cido f\u00edtico y del modo de reconstituci\u00f3n, mediante solubilidad y di\u00e1lisis mineral. En el \u00faltimo estudio de este trabajo, se investig\u00f3 la disponibilidad mineral de las papillas infantiles (desfitinizadas o no y reconstituidas con agua o con f\u00f3rmula de continuaci\u00f3n) mediante la l\u00ednea celular caco-2. Se comprob\u00f3 que tanto las papillas infantiles comerciales como sus materias primas presentan unos niveles de inositoles fosfato que pueden comprometer su disponibilidad mineral. Tras el tostado y tratamiento con alfa-amilasa de las materias primas, se observ\u00f3 un descenso en el contenido de \u00e1cido f\u00edtico, pero insufiente, ya que el estudio de las razones molares fitato:mineral de las papillas infantiles comerciales present\u00f3 valores que comprometen la disponibilidad mineral. La desfitinizaci\u00f3n de las muestras se realiz\u00f3 mediante fitasa procedente de aspergillus oryzae. El estudio de la disponibilidad mineral de las papillas infantiles desfitinizadas o no y mezcladas con agua o con f\u00f3rmula de continuaci\u00f3n mediante solubilidad y di\u00e1lisis mostr\u00f3 que la desfitinizaci\u00f3n de las papillas infantiles mejora la disponibilidad in vitro del hierro y el cinc cuando \u00e9stas est\u00e1n elaboradas con agua, frente a las elaboradas con f\u00f3rmula de continuaci\u00f3n.
