Este material extracelular presenta un elevado contenido proteico as\u00ed como interesantes propiedades aplicadas que han dado lugar a dos patentes para su aplicaci\u00f3n en el campo de la industria cosm\u00e9tica y farmac\u00e9utica. Los objetivos planteados en esta memoria doctoral han sido:    1,- realizar un estudio ultraestructural de p.Antarctica nf3 y del material exopolim\u00e9rico que produce mediante t\u00e9cnicas de microscop\u00eda electr\u00f3nica de transmisi\u00f3n (met), microscop\u00eda electr\u00f3nica de barrido (meb) y microscop\u00eda de fuerza at\u00f3mica (afm).     2,- establecer el origen del elevado contenido proteico del material exopolim\u00e9rico producido por p.Antarctica nf3.     3,- estudiar las adaptaciones morfol\u00f3gicas y fisiol\u00f3gicas de p.Antarctica nf3 a diferentes temperaturas de incubaci\u00f3n utilizando modelos predictivos del crecimiento.     el estudio ultraestructural mediante la utilizaci\u00f3n de tres t\u00e9cnicas de microscop\u00eda de alto poder resolutivo como las de met, sem y afm, ha permitido establecer la arquitectura del material exopolim\u00e9rico producido por p.Antarctica nf3. Este material extracelular estar\u00eda formado por un pol\u00edmero capsular alrededor de las c\u00e9lulas y abundantes ves\u00edculas de membrana (vm) inmersas en la matriz exopolim\u00e9rica de la bacteria. El estudio del perfil proteico y del perfil lip\u00eddico, as\u00ed como el estudio ultraestructural de estas estructuras han demostrado que derivan de la membrana externa bacteriana y que en su formaci\u00f3n atrapan parte del contenido del espacio peripl\u00e1smico de p.Antarctica.     la presencia de varias prote\u00ednas formando parte de las vm indica que estas estructuras son las responsables del gran contenido proteico descrito en el material exopolim\u00e9rico de p.Antarctica nf3.
