Uno de los cultivos de mayor superficie en espa\u00f1a, y en general en toda la cuenca mediterr\u00e1nea, es el olivo. Dentro de este sectr, el hueso entero de la aceituna supone un porcentaje importante del peso total del fruto (20-28%) y puede ser considerado como un subproducto de los proceso de obtenci\u00f3n del aceite de oliva y de las aceitunas de mesa. Aunque las cantidades de huesos disponibles, en comparaci\u00f3n con otros residuos de origen agr\u00edcola o forestal son relativamente peque\u00f1as, la concentraci\u00f3n geogr\u00e1fica de las instalaciones donde se obtienen frente a aquellos.  el objetivo de esta investigaci\u00f3n es estudiar la hidr\u00f3lisis enzim\u00e1tica del hueso de aceituna fragmentado, previamente pretratado en un reactor a presi\u00f3n. Los hidrolizados obtenidos tras el proceso enzim\u00e1tico son fermentados a etanol y xilitol utilizando levaduras no tradicionales, tales como pachysolen tannophilus. Esta levadura puede lograr un un aprovechamiento m\u00e1s completo del residuo al ser capaz de trnasformar las fracciones celul\u00f3sicas y hemiceul\u00f3sicas del
