La existencia de tres aceites de girasol con composiciones muy distintas en \u00e1cidos grasos (alto palm\u00edtico, alto oleico y alto linoleico), sin cambios significativos en los componentes menores de la fracci\u00f3n insaponificable, facilit\u00f3 la consecuci\u00f3n de los objetivos. La cantidad total de productos de degradaci\u00f3n aument\u00f3 significativamente con el grado de insaturaci\u00f3n, mientras que la p\u00e9rdida de antioxidantes naturales, fue superior en los
