Montilla-moriles, de tal modo que se reduzca su contenido mediante la transformaci\u00f3n en \u00e1cido l\u00e1ctico o en otros productos deseables, se ha planteado una doble estrategia consistente en controlar dos procesos: la fermentaci\u00f3n malol\u00e1ctica o transformaci\u00f3n del \u00e1cido m\u00e1lico en \u00e1cido l\u00e1ctico, mediante la acci\u00f3n de bacterias del \u00e1cido l\u00e1ctico; y la fermentaci\u00f3n maloetan\u00f3lica o conversi\u00f3n del \u00e1cido m\u00e1lico en etanol, por medio de ciertas levaduras. Para ello, se ha procedido en primer lugar al aislamiento y selecci\u00f3n de cepas de levadura de la fermentaci\u00f3n y de la crianza. Se ha procedido a caracterizar ambos tipos de levadura encontr\u00e1ndose diferencias significativas (fermentaci\u00f3n de az\u00facares, tolerancia al litio y al cobre, realizaci\u00f3n de la fermentaci\u00f3n maloetan\u00f3lica) a pesar de que econ\u00f3micamente ambos tipos de levadura pertenecen a saccharomyces cerevisiae. En la actualidad, se est\u00e1 ampliando la caracterizaci\u00f3n iniciando estudios sobre el cariotipado cromos\u00f3mico mediante aplicaci\u00f3n del chef. Las bacterias del \u00e1cido m\u00e1lico fueron tambi\u00e9n identificadas (identificaci\u00f3n taxon\u00f3mica: tinci\u00f3n de gram, reacci\u00f3n de la catalasa, fermentaci\u00f3n de los az\u00facares, crecimiento a diferentes temperaturas &#8230;Etc), y para confirmar la identificaci\u00f3n se aplic\u00f3 la pcr.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
