Se emplean en el procesado del almid\u00f3n que constituye la transformaci\u00f3n b\u00e1sica de las industrias dedicadas a la obtenci\u00f3n de az\u00facares sencillos y etanol.    saccharomyces cerevisiae (var. Diastaticus) posee genes denominados sta que codifican gas (yamashita et al 1987). Este enzima presenta una estructura at\u00edpica: posee un dominio n-terminal, rico en residuos de serina y treonina (strd o \u00abser and thr rich-domain\u00bb) ausente en las otras gas f\u00fangicas y carece de un dominio de uni\u00f3n al almid\u00f3n o sbd presente en la mayor\u00eda enzimas. La ausencia de este dominio hace que la ga de s. Cerevisiae sea ineficaz en la degradaci\u00f3n de almid\u00f3n insoluble, necesaria para el procesado de las formas de almid\u00f3n utilizadas en la industria.  la presente tesis doctoral tiene como objetivo el estudio de las propiedades estructurales y funcionales de la glucoamilasa codificada por sta1 de saccharomyces cerevisiae y la modificaci\u00f3n del enzima utilizando t\u00e9cnicas de ingenier\u00eda de prote\u00ednas para obtener variantes con propiedades mejoradas y con mayor eficiencia catal\u00edtica.  La mejora de sus propiedades abrir\u00eda interesantes posibilidades al desarrollo de nuevos procedimientos fermentativos que permitir\u00edan la transformaci\u00f3n directa de almid\u00f3n en etanol. se han obtenci\u00f3n estirpes de s. Cerevisiae, de laboratorio y de origen industrial, capaces de sobreproducir el enzima ya que la levadura produce glucoamilasa pero no en cantidad elevada.  La mejora en la producci\u00f3n ha permitido la caracterizaci\u00f3n bioqu\u00edmica de la enzima, en concreto, se han analizado sus propiedades fisico-qu\u00edmicas y catal\u00edticas. Centr\u00e1ndonos especialmente en el estudio de las propiedades derivadas de la glicosilaci\u00f3n extrema que presenta esta prote\u00edna. por otro lado, se ha caracterizado estructuralmente la ga de s.
