{"id":63610,"date":"2018-03-09T22:51:32","date_gmt":"2018-03-09T22:51:32","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/parametros-de-calidad-en-el-cebo-de-terneros-en-galicia\/"},"modified":"2018-03-09T22:51:32","modified_gmt":"2018-03-09T22:51:32","slug":"parametros-de-calidad-en-el-cebo-de-terneros-en-galicia","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/santiago-de-compostela\/parametros-de-calidad-en-el-cebo-de-terneros-en-galicia\/","title":{"rendered":"Parametros de calidad en el cebo de terneros en galicia"},"content":{"rendered":"<h2>Tesis doctoral de <strong> Gonzalo Domingo Aragon <\/strong><\/h2>\n<p>En el presente trabajo se incorporan nuevas investigaciones relacionadas con la situaci\u00f3n t\u00e9cnica del cruzamiento industrial del ganado vacuno de carne en galicia, incluyendo estudios de crecimiento y de la calidad de la canal y de la carne de 66 terneros obtenidos por cruce de la raza rubia gallega y otras razas de producci\u00f3n de carne con holstein frisian. Los resultados indican que las canales mas pesadas, mejor conformadas, m\u00e1s compactas y con mayor rendimiento fueron las procedentes del cruce de azul blanco belga, y las m\u00e1s ligeras y de menor rendimiento las de limousine, situ\u00e1ndose las de rubia gallega en una posici\u00f3n intermedia. El \u00e1rea del longissimus thoracis fue mayor en los terneros procedentes del cruce rubio gallego x fris\u00f3n (83,58), muy  superior al del cruce de limousine (75,35); los de azul belga dieron resultados intermedios (80,49). En la calidad de la carne se observaron diferencias  altamente significativas en las perdidas de jugo por presi\u00f3n, siendo muy similares en los genotipos de rubio gallegos limousine, diferenci\u00e1ndose de los de azul belga que fue la que tuvo las mayores perdidas (19,18; 19.46 vs 21.63). El veteado tuvo los valores m\u00e1s positivos en los cruces con rubio gallego (163) diferenci\u00e1ndose de limousine (1.21) y azul blanco belga (1.31)%. Los resultados obtenidos en el perfil de \u00e1cidos grasos mostraron en todos los animales unas buenas proporciones de oleico, linoleico y araquid\u00f3nico, distingui\u00e9ndose en el fenotipo de rubio gallego las proporciones mas altas de oleico y menores de palm\u00edtico. La proporci\u00f3n mufa\/sfa mas elevada la presento el fenotipo rubio gallego x fris\u00f3n. As\u00ed mismo los \u00e1cidos poliinsaturados fueron m\u00e1s elevados en los cruces de azul blanco belga y rubio gallego.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
