Cuando se administran antibi\u00f3ticos a animales destinados al consumo humano es necesario esperar a que estos f\u00e1rmacos sean metabolizados y eliminados, ya que residuos de estas sustancias permanecen en los tejidos del animal y pueden ser ingeridos por el ser hmano a traves de la dieta. La uni\u00f3n europea ha establecido unos l\u00edmites m\u00e1ximo de residuo (lmr) que establecen las concentraciones m\u00e1ximas de residuo que se permiten en tejidos biol\u00f3gicos para diferentes f\u00e1rmacos. en esta tesis doctoral se han desarrollado met\u00f3dicas de extracci\u00f3n de quinolonas del m\u00fasculo de pollo. Dichas met\u00f3dicas se ha aplicado a las t\u00e9cnicas de separaci\u00f3n, electroforesis capilar y cromatograf\u00eda de l\u00edquidos, con detecci\u00f3n uv y acoplada a la espectrometr\u00eda de masas. Los m\u00e9todos de determinaci\u00f3n establecidos se han validado y los par\u00e1metros de calidad obtenidos son adecuados para permitir la determinaci\u00f3n de las quinolonas por debajo de los lmr
