Se ha utilizado ?-Lactoglobulina (?-Lg) y un aislado de prote\u00ednas de suero de leche comercial (wpi). Las prote\u00ednas se han sometido a tratamientos de presiones comprendidas entre 100 y 400 mpa y a distintos procesos de digesti\u00f3n enzim\u00e1tica. se ha demostrado que la mayor susceptibilidad a la hidr\u00f3lisis de la ?-Lg est\u00e1 relacionada con el grado de flexibilizaci\u00f3n de la mol\u00e9cula y \u00e9ste con el nivel de presi\u00f3n aplicado y el ph. Se ha comprobado que el tratamiento simult\u00e1neo de alta presi\u00f3n y proteolisis es muy eficaz, eliminando la prote\u00edna nativa en tiempos mucho m\u00e1s cortos que a presi\u00f3n atmosf\u00e9rica. La aplicaci\u00f3n simult\u00e1nea de tratamientos de alta presi\u00f3n y proteolisis sobre la ?-Lg permite disminuir r\u00e1pida y eficazmente la inmunorreactividad (capacidad de uni\u00f3n a anticuerpos comerciales y a ige de suero de pacientes al\u00e9rgicos). La inmunorreactividad residual de los hidrolizados se ha atribu\u00eddo a determinados p\u00e9ptidos que conservaban secuencias previamente identificadas como ep\u00edtopos alerg\u00e9nicos de la ?-Lg. Algunos de los p\u00e9ptidos formados se han relacionado con fragmentos que poseen propiedades tolerog\u00e9nicas. asimismo, se ha demostrado que tratamientos de alta presi\u00f3n y proteolisis simult\u00e1nea permiten producir hidrolizados de wpi de baja inmunorreactividad, con buena estabilidad t\u00e9rmica y una capacidad emulsionante comparable a la de las prote\u00ednas de las que
