La deficiencia de este elemento ha sido indicada como la causa de diferentes enfermedades. La principal forma de incorporaci\u00f3n de selenio en el hombre es a trav\u00e9s de la dieta (pescados, vegetales, carnes). En varias regiones del planeta se ha estimado que el contenido de selenio en la dieta es insuficiente para la adecuada expresi\u00f3n de las selenoprote\u00ednas. Este hecho justifica el creciente inter\u00e9s en desarrollar alimentos funcionales enriquecidos en selenio, as\u00ed como el desarrollo de nuevas metodolog\u00edas anal\u00edticas para la caracterizaci\u00f3n de sus especies en estas matrices. el objetivo principal de esta tesis ha sido el desarrollo de metodolog\u00edas anal\u00edticas apropiadas basadas en el uso del icp-ms y de tratamientos de muestra adecuados para la extracci\u00f3n de especies de selenio en muestras biol\u00f3gicas de inter\u00e9s nutricional. para ello, se estudi\u00f3 la capacidad de acumulaci\u00f3n y transformaci\u00f3n selenio en varias especies vegetales (r\u00e1bano, br\u00f3coli y lentejas) con el fin de obtener informaci\u00f3n acerca del metabolismo de selenio. Adem\u00e1s, se evalu\u00f3 la potencial bioaccesibilidad del selenio y el efecto del proceso de cocci\u00f3n en estos vegetales sobre la integridad de las especies. Por otra parte, se estudi\u00f3 la acumulaci\u00f3n y distribuci\u00f3n en especies de selenio en pescados (clarias gariepinus) enriquecidos con este elemento a trav\u00e9s de la dieta.
