Se determinaron caracter\u00edsticas qu\u00edmicas, f\u00edsico-qu\u00edmicas, bioqu\u00edmicas, microbiol\u00f3gicas y sensoriales del queso. Analizando todos los resultados obtenidos se ha comprobado que es posible acelerar la maduraci\u00f3n en quesos de oveja de gran formato utilizando diferentes cantidades de coagulante vegetal o mezclas de cvl\/cuajo de ternera manteniendo las caracter\u00edsticas organol\u00e9pticas habituales, as\u00ed como recuentos microbiol\u00f3gicos y composici\u00f3n qu\u00edmica bruta de los quesos
