As\u00ed se han determinado los compuestos vol\u00e1tiles m\u00e1s importantes derivados de la crianza de vinos tintos en barricas de roble, se han clasificado diferentes virutas de roble por su origen y grado de tostado y se ha evaluado la contaminaci\u00f3n por brettanomyces y por \u00e9steres del \u00e1cido ft\u00e1lico en diferentes vinos. Adem\u00e1s, se ha desarrollado un m\u00e9todo anal\u00edtico para evaluar el contenido de compuestos vol\u00e1tiles residuales presentes en extractos comerciales de romero. Dichos extractos tienen una importante capacidad antioxidante pero tras su obtenci\u00f3n permanecen en ellos ciertos compuestos vol\u00e1tiles que confieren al extracto un olor t\u00edpico a romero que puede ser no deseable para ciertas aplicaciones. en todos los m\u00e9todos desarrollados se ha empleado la hs-spme como t\u00e9cnica de preparaci\u00f3n de muestra. Esta t\u00e9cnica desarrollada a principios de los a\u00f1os noventa se caracteriza por su sencillez, sensibilidad, rapidez, bajo coste y un amplio campo de aplicaci\u00f3n que incluye muestras s\u00f3lidas y l\u00edquidas. la hs-spme tambi\u00e9n se ha aplicado a la extracci\u00f3n de compuestos generados mediante derivatizaci\u00f3n in situ y en algunos de los m\u00e9todos se ha usado una de sus variantes, la microextracci\u00f3n en fase s\u00f3lida m\u00faltiple (mspme). De esta \u00faltima, muy adecuada para realizar la cuantificaci\u00f3n directa en muestras s\u00f3lidas o de matriz compleja, tambi\u00e9n se han desarrollado algunos aspectos te\u00f3ricos como el
