La judia verde es una de las leguminosas utilizadas con mas frecuencia como ingrediente de este tipo de alimentos. Con el fin de evaluar la aptitud de la judia verde como ingrediente de beikosts infantiles homogeneizados, se han seleccionado tres variedades de vaina redonda denominadas \u00abcleo\u00bb, \u00abstrike\u00bb y \u00absentry\u00bb, clasificadas segun el diametro de la vaina en diferentes calibres (establecidos por la normativa espa\u00f1ola). Segun los resultados obtenidos en el analisis quimico proximal, el porcentaje de grasa, cenizas y los hidratos de carbono disminuyen durante el desarrollo de las vainas, mientras que, por el contrario, la fibra dietetica total se incrementa. El calibre ef de las variedades cleo y sentry posee una mayor riqueza en nutrientes, mientras que la variedad strike presenta un contenido muy elevado en fibra insoluble, lo cual podria afectar negativamente a las caracteristicas texturales del beikosts y desaconsejamos su formulacion en un alto porcentaje. Tras evaluar la biodisponibilidad \u00abin vitro\u00bb del hierro, cinc, calcio y magnesio, asi como el contenido en acido fitico, se recomienda la utilizacion de calibres inmaduros en la elaboracion de beikosts infantiles. Por otra parte, el bajo contenido en sodio y las elevadas concentraciones de potasio, determinan su adecuacion como ingrediente de dietas infantiles.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de
