La intensidad de fluorescencia de este complejo depende de la concentraci\u00f3n m\u00e1sica del substrato de manera lineal, para amw constante, y depende del amw de manera no lineal, tomando la forma de una curva creciente que comienza en un dp de 6 y alcanza un valor constante para un dp de 300 en adelante. Durante la despolimerizaci\u00f3n de los a-glucanos con enzimas amilol\u00edticos se produce una disminuci\u00f3n de su concentraci\u00f3n m\u00e1sica, de su amw o de ambos que se refleja en el sistema fia en una disminuci\u00f3n de la se\u00f1al fluorescente. Esto ha permitido desarrollar una metodolog\u00eda 2,6-tns\/fia para la determinaci\u00f3n de actividades amilol\u00edticas bas\u00e1ndonos en la formaci\u00f3n del complejo fluorescente y su dependencia respecto al amw y la concentraci\u00f3n m\u00e1sica de substrato. Con esta metodolog\u00eda se han determinado las cin\u00e9ticas de despolimerizaci\u00f3n de amilosa, amilopectina, almid\u00f3n soluble y maltodextrinas por dos exo-enzimas: la b-amilasa de cebada y la glucoamilasa de aspergillus niger y un endo-enzima, la a-amilasa de aspergillus oryzae, as\u00ed como la determinaci\u00f3n de esta actividades enzim\u00e1ticas empleando estos
