Al mismo tiempo se dise\u00f1an esquemas productivos para la recuperacion de aromas de sidra y manzana.  el trabajo se inicia estudiando la eliminacion de etanol de mezclas etanol agua, pasando posteriormente al estudio de sidras. La reduccion de etanol es importante aunque se produce simultaneamente una extraccion de aromas. En el trabajo se detallan las tecnicas analiticas empleadas (cromatografia gaseosa y espectrometria de masas, para la identificacion de los aromas mayoritarios de sidra y
