El antociano sufre un proceso de degradacion estructural en el que se forma acido siringico, procedente del resto relativo al anillo b del antociano. El 3mgmv experimenta un proceso de condensacion directa con catequina, la cual es relativamente lenta, ya que el antociano debe encontrarse en forma flavilio, de acuerdo al mecanismo de reaccion que se propone. Como resultado de esta condensacion se forman pigmentos pardo-amarillentos que, de acuerdo a sus caracteristicas espectrales, podrian corresponder a sales de xantilio. La interaccion entre 3mgmv y catequina en presencia de acetaldehido da lugar a la formacion de dos pigmentos (i y ii), dichos pigmentos evolucionan en el tiempo hacia estructuras mas polimerizadas. Se han encontrado evidencias de que estos pigmentos deben estar formados por catequina, la cual reacciona primero con el acetaldehido, y el aducto resultante condensa con el antociano; la estructura propuesta para los pigmentos i y ii es la de dos enantiomeros del dimero catequina (8   ) acetil (   8) antociano. Para su formacion es necesario un ph relativamente acido, debido a que el acetaldehido debe encontrarse en forma cationica para poder reaccionar con la catequina, y ocurra la
