Paz <\/strong><\/h2>\n<p>En este trabajo se eval\u00faa la influencia de la tecnolog\u00eda pre-fermentativa sobre la composici\u00f3n qu\u00edmica y la fracci\u00f3n arom\u00e1tica de la sidra. Se plantea el estudio a partir de un dise\u00f1o experimental de dos factores (prensado y clarificaci\u00f3n) con dos niveles (prensado r\u00e1pido y lento y clarificaci\u00f3n espont\u00e1nea o enzim\u00e1tica) y tres repeticiones.  el prensado influy\u00f3 de forma significativa en el contenido de polifenoles, nitr\u00f3geno y pectina en la etapa inicial de proceso. Los mostos obtenidos medinte prensado lento presentaron menores contenidos en polifenoles y nitr\u00f3geno y mayores en pectinas que los del sistema r\u00e1pido.  con respecto a la fracci\u00f3n arom\u00e1tica, se ha observado que en general, las sidras obtenidas mediante prensado lento presentaron mayores cantidades de alcoholes y \u00e9steres que las del sistema r\u00e1pido, mientras que \u00e9stas tuvieron mayores niveles de \u00e1cidos grasos y cetonas, fundamentalmente, aceto\u00edna. las sidras sometidas a clarificaci\u00f3n enzim\u00e1tica presentaron menores concentraciones de alcoholes superiores y \u00e9steres y mayores cantidades de \u00e1cidos grasos.  agrupando las muestras en cuatro categor\u00edas, de acuerdo con la tecnolog\u00eda de elaboraci\u00f3n y aplicando un an\u00e1lisis discriminante lineal por etapas se identificaron como variables discriminantes los siguientes compuestos: 2-feniletanol mayor succinato de dietilo mayor laurato de etilo mayor gamma-butirolactona mayor isobutanol mayor acetato de 2-feniletilo mayor \u00e1cido capricho mayor \u00e1cido l\u00e1urico mayor 2,3-butanodiol mayor aceto\u00edna.  finalmente, se hace un estudio de evaluaci\u00f3n sensorial de sidra natural, comparando los resultados obtenidos pora un grupo entrenado y por un grupo de consumidores.
