De todos estos productos, el m\u00e1s t\u00edpico  y conocido es el jam\u00f3n curado, que es tambi\u00e9n uno de los m\u00e1s apreciados por los consumidores. as\u00ed , la l\u00ednea de investigaci\u00f3in gen\u00e9tica de la que parte esta investigaci\u00f3n es la mejora de la calidad del  jam\u00f3n curado y se desarroll\u00f3 en los laboratorios de la empresa campofr\u00edo alimentaci\u00f3n , s.A. (Antes grupo navidul s. A.)En colaboraci\u00f3n con el dpto. De qu\u00edmica an\u00e1litica de la universidad de c\u00f3rdoba.  a la vista de  los resultados obtenidos en anteriores investigaciones del grupo y los de la bibliograf\u00eda existente, se ha realizado una investigaci\u00f3n exhaustiva y sistem\u00e1tica de la materia prima que se recibe en la industria , caracterizando diferentes cruces gen\u00e9ticos en cuanto a la calidad de la canal, contenido de grasa, caracteristicas f\u00edsico-qu\u00edmicas de los perniles, concentraci\u00f3n de metales traza y frecuencia de aparici\u00f3n de defectos en el producto final. De forma paralela, se evalu\u00f3 la influencia en la calidad del producto final de factores tales como la alimentaci\u00f3n , el sistema de producci\u00f3n de los animales, la fecha y las condiciones de sacr\u00edficio (temperatura, transporte, etc). La frecuencia de aparici\u00f3n de defectos de textura y color en funci\u00f3n de las anteriores variables se relacionaron con el ph antes de salaz\u00f3n ,  la proteolisis y los espectros en el visible y el infarrojo cercano (nir). As\u00ed se ha establecido la capacidad de diferentes par\u00e1metros para predecir la tendencia  de la materia prima a experimentar una evoluci\u00f3n anormal durante la etapa de curado y dar lugar a
