La etiolog\u00eda de las mismas permanece en gran parte desconocida, si bien, presentan una marcada variabilidad geogr\u00e1fica, lo que permite sugerir que diferentes factores ambientales, como la dieta materna, podr\u00edan estar involucrados. El estr\u00e9s t\u00e9rmico al que son sometidos los aceites ricos en \u00e1cidos grasos poliinsaturados durante los procesos de fritura, se generan un gran n\u00famero de productos que pueden ser t\u00f3xicos para el organismo.
