Dolores <\/strong><\/h2>\n<p>Se ha aobrdado el estudio de la influencia del acido ascorbico en la estabilidad del 3-monoglucosido de malvidina y de esta forma evaluar su posible utilizacion en la practica enologica en sustitucion, parcial o total, de los sulfitos. El dise\u00f1o experimental comprende ensayos en sistemas modelo simples donde se estudian los cambios que experimenta el antociano en presencia de ascorbico y en distintas combinaciones con catequina, acetaldehido y dioxido de azufre, preparadas a diferentes ph (3,2 y 4) y mantenidas a 15  c y 32  c. Se concluye que el ascorbico acelera la degradacion estructural del antociano, para la que se propone un mecanismo de ruptura que da lugar a la formacion de acido siringico y 2,4,6-trihidroxibenzaldehido. Asimismo, este aditivo no impide ni la reaccion de condensacion directa entre antociano y catequina ni la mediada por acetaldehidoe incluso a ph 4 puede favorecer un mayor pardeamiento de las disoluciones. Se ha comprobado que, en unn medio hidroalcoholico, el ascorbico provoca la generacion de acetaldehido lo que puede tener importancia en la cinetica de las racciones estudiadas.
