En este contexto, surge el empleo de nuevas tecnolog\u00edas de procesado (alta presi\u00f3n y campos el\u00e9ctricos pulsados) como alternativa a las tecnolog\u00edas t\u00e9rmicas tradicionalmente empleadas en la industria, que van a proporcionar alimentos con sus propiedades m\u00ednimamente modificadas o incluso potenciadas. Sin embargo, hay que tener en cuenta que los compuestos bioactivos de los alimentos vegetales necesitan ser absorbidos para ejercer sus posibles efectos beneficiosos para la salud, desconoci\u00e9ndose c\u00f3mo estas nuevas tecnolog\u00edas pueden modificar su composici\u00f3n en el tejido vegetal y, en consecuencia, su absorci\u00f3n y metabolismo \u00abin vivo\u00bb en humanos.  por tanto, el objetivo de esta tesis ha sido el estudio del efecto de las nuevas tecnolog\u00edas de procesado y conservaci\u00f3n de alimentos (alta presi\u00f3n y campos el\u00e9ctricos pulsados) en comparaci\u00f3n con las tecnolog\u00edas t\u00e9rmicas tradicionales sobre los principales compuestos bioactivos (vitamina c, compuestos carotenoides y flavanonas) y la actividad antioxidante del zumo de naranja, as\u00ed como el efecto sobre la biodisponibilidad y marcadores de estr\u00e9s oxidativo en humanos.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis
