Se ensayaron diversos gl\u00fatenes de trigo, prote\u00ednas derivadas del ma\u00edz (ze\u00edna, gluten hidrolizado), extractos de levadura (saccharomyces cerevisiae) y una prote\u00edna del alga espirulina platensis.Inicialmente se llev\u00f3 a cabo la caracterizaci\u00f3n de las prote\u00ednas y de los vinos tintos. Tras la caracterizaci\u00f3n y a trav\u00e9s de ensayos de clarificaci\u00f3n, se realiz\u00f3 una selecci\u00f3n de las prote\u00ednas basada en el mejor comportamiento enol\u00f3gico y de calidad sensorial en comparaci\u00f3n con la gelatina. Con las prote\u00ednas seleccionadas se clarificaron los vinos tintos y se analizaron los efectos sobre los principales par\u00e1metros fisicoqu\u00edmicos y de calidad de los vinos tratados. A continuaci\u00f3n se estudi\u00f3 la cin\u00e9tica de la clarificaci\u00f3n y la relaci\u00f3n entre las caracter\u00edsticas de las prote\u00ednas y los par\u00e1metros analizados en los vinos tratados.De los resultados se obtuvo que los extractos de levadura en combinaci\u00f3n con bentonita, y el gluten hidrolizado de ma\u00edz y dos gl\u00fatenes de trigo usados en solitario presentaron mejor comportamiento enol\u00f3gico que la gelatina. Estos redujeron la turbidez de forma similar, generando l\u00edas de menor volumen y m\u00e1s compactas que la gelatina, mientras que las caracter\u00edsticas polifen\u00f3licas y de color no fueron modificadas significativamente. En cuanto a la calidad sensorial entre los vinos clarificados con las prote\u00ednas de origen no animal y los vinos clarificados con la gelatina no se encontraron diferencias significativas. asimismo se ha estudiado la evoluci\u00f3n de la turbidez durante el encolado obteni\u00e9ndose, para el caso de las prote\u00ednas de origen no animal, una velocidad de floculaci\u00f3n y clarificaci\u00f3n
