<\/strong><\/h2>\n<p>Introducci\u00f3n:la bolleria es un vehiculo adecuado para la indusi\u00f3n de ingredientes funcionales.El objetivo del estudio ha sido el desarrollo de productos de bolleria con capacidad para disminuir el riesgo cardiovascular , no presentar efectos secundarios y se orgamolepticamente conectos.  material y metodos:se han ensayado dos tipos de productos:croisants y magdalenas , enriquecidos con fitostenoles, x tocofecol y b-conoteno.  los ensayos han consistido en una evaluaci\u00f3n organoleptica, an\u00e1lisis de estos productos comparado con los productos de mercado y me ensayo cl\u00ednico para verificar el descenso de colesterol plasm\u00e1tico despu\u00e9s de una ingesta de 8 semanas en un grupo de 28 personas frente a otro grupo control de 29, consumiendo bolleria convencional.  resultados.1)la bolleria enriquecida muestra una obsoluta reutialidad organol\u00e9ptica respecto a la convencional.2)existe una clara diferenciaci\u00f3n enlos distintos tipos de boller\u00eda , por otra parte , la boller\u00eda enriquecida es totalmente asimilable a la convencional.3)el ensayo cl\u00ednico muestra una reduci\u00f3n del colesterol total de 8,990 y del ldl-colesterol de 14,7%.La concentraci\u00f3n de antioxidantes , liposolubles, que normalmente disminuyen en este tipo de ensayos , se mantiene .  se recomienda la adici\u00f3n de estos ingredientes
