Dada su estructura muy pocos enzimas son capaces de degradar latrh: prolil endopeptidasa, que es capaz de hidrolizar el enlace pro-x (siendo x cualquier amino\u00e1cido, excepto otra prolina) y la piroglutamil peptidasa i, capaz de hidrolizar el enlace pept\u00eddico pglu-x. Los tejidos elegidos son diferentes zonas cerebrales (hipot\u00e1lamo, corteza cerebral, estriado, cerebelo y tronco del enc\u00e9falo), hip\u00f3fisis, h\u00edgado, ri\u00f1\u00f3n, coraz\u00f3n y pulm\u00f3n. Se han empleado ratas en diferentes estadios del desarrollo: d\u00eda embrionario 22 (e22), d\u00eda de nacimiento (pd0) y diferentes d\u00edas postnatales (pd2, pd4, pd10, pd15, pd20, pd30, pd90). para estudiar el envejecimiento, se emplearon ratas adultas j\u00f3venes (pd90 o pm3), y ratas viejas de diferentes edades, pm18 y pm22.  como podemos observar en los resultados, la actividad de ambos enzimas disminuye significativamente durante el desarrollo, excepto la actividad piroglutamil peptidasa i en el h\u00edgado y en el ri\u00f1\u00f3n.  En el envejecimiento contin\u00faa la tendencia a descender, siendo significativa en el caso de la prolil endopeptidasa soluble en el pulm\u00f3n. Los cambios significativos que se observan durante el desarrollo y el envejecimiento, tanto para la prolil endopeptidasa como para la piroglutamil peptidasa i, sugieren que los dos enzimas puedan
