Rioja desde la obtenci\u00f3n del mosto de uva hasta la finalizaci\u00f3n de la fermentaci\u00f3n malol\u00e1ctica (fml). Esta microbiota evolucion\u00f3 desde unos valores medios de 104 ufc\/ml en el mosto, a valores pr\u00e1cticamente indetectables en plena fermentaci\u00f3n alcoh\u00f3lica (foh), recuper\u00e1ndose de nuevo a finales de la foh y en los momentos previos a la fml. Desde el mosto a las etapas previas a la fml se observ\u00f3 una gran diversidad de especies de los g\u00e9neros lactobacillus, pediococcus, leuconostoc y oenococcus, siendo lactobacillus el g\u00e9nero predominante y oenococcus minoritario. Sin embargo, en las etapas previas a la fml se observ\u00f3 un incremento de o. oeni y durante el desarrollo de la fml esta especie fue dominante. Se ha obtenido asimismo una colecci\u00f3n importante de cepas de bacterias l\u00e1cticas (bl) aut\u00f3ctonas de los mostos y vinos de d.O.Ca. Rioja y se han puesto a punto m\u00e9todos de la biolog\u00eda molecular para su identificaci\u00f3n a nivel de especie y clonal. Se detect\u00f3 una mayor reproducibilidad y mayor poder de discriminaci\u00f3n con la t\u00e9cnica de electroforesis de campos pulsados (pfge) y la enzima de restricci\u00f3n sfii respecto a la t\u00e9cnica de amplificaci\u00f3n al azar del dna polim\u00f3rfico (rapd) para la discriminaci\u00f3n clonal de los aislados de o. Oeni y de l. Plantarum de origen enol\u00f3gico. Se ha llevado a cabo una fml inducida con bl obtenidas en este trabajo y se ha monitorizado correctamente el proceso para determinar el nivel de implantaci\u00f3n mediante la t\u00e9cnica de pfge.  por otro lado, se ha puesto a punto la t\u00e9cnica de electroforesis en gradiente de desnaturalizaci\u00f3n (dgge) para el estudio directo de la microbiota bacteriana del vino sin cultivos previos. La t\u00e9cnica de dgge utilizando dos parejas de cebadores dise\u00f1adas en este estudio, sirvieron para diferenciar especies de bacterias l\u00e1cticas+ac\u00e9ticas, y bacterias l\u00e1cticas
