Candelaria <\/strong><\/h2>\n<p>Se ha realizado un estudio sobre perfil lipidico en la alimentacion de la comunidad autonoma canaria partiendo de los datos de 2025 encuestas de alimentacion (frecuencia de consumo). Se consideraron los siguientes nutrientes: lipidos totales, acidos grasos saturados (ags), monoinsaturados (agm) y poliinsaturados (agp) y colesterol. El consumo medio de grasa en canarias es elevado, 134 g\/pc\/dia, que representa el 40% de la ingesta energetica total, superandose el 30% recomendable. Los aceites y grasas son los que mas contribuyen a la ingesta de lipidos totales (casi el 50%), hecho que permite una facil manipulacion de la grasa culinaria, que repercute en la cantidad de grasa de la dieta. La ingesta media de ags del individuo canario es de 41 g\/dia (12,4% de la energia de la dieta), que supera en mas del 130% las pautas recomendadas. La mayor parte de los ags la aporta el grupo de la leche y derivados (40%), aun considerando que en canarias el 55% del mercado lacteo corresponde a un preparado que tiene la grasa sustituida por grasa vegetal. La ingesta media de agm del individuo canario es de 53 g\/dia, (16% de las calorias totales). El individuo canario medio ingiere 31 g de agp por dia, (9% de la energia de la dieta).  logicamente, la mayor proporcion de agm y agp proviene del grupo de aceites y grasas. El indice p\/s tiene un valor de 0,74. El consumo de colesterol es de 337,3 mg de colesterol por persona y dia, (111,6 mg\/1000 kcal), cantidad que supera en un 12% la recomendacion.
