Adem\u00e1s, se determino la fibra alimentar\u00eda total para establecer su posible influencia sobre la digestibilidad proteica. En lentejas se determino tambi\u00e9n la ornitina, animo\u00e1cido no proteico detectado en las semillas.  \tlos resultados obtenidos permitieron establecer las condiciones \u00f3ptimas de germinaci\u00f3n para maximizar la calidad proteica, estimar el grado interacci\u00f3n entre lisina y azucares reductores en las harinas germinadas y establecer diversas correlaciones entre los
