As\u00ed,  la tendencia a consumir alimentos refinados o procesados, o las frutas y verduras en lugar de frescas enlatadas o previamente cocinadas disminuye la ingesti\u00f3n de vitaminas y minerales que pueden influir en la aparici\u00f3n de patolog\u00edas de elevada preValencia c\u00f3mo la diabetes mellitus tipo 2 (dm2). El cromo (cr), despu\u00e9s del calcio, constituye el suplemento mineral m\u00e1s vendido en los estados unidos. Entre otras indicaciones (c\u00f3mo disminuci\u00f3n de la grasa corporal y de los niveles plasm\u00e1ticos de colesterol), el cr se utiliza  c\u00f3mo prevenci\u00f3n y tratamiento de la diabetes mellitus (dm), aunque los estudios realizados hasta el momento encuentran resultados contrapuestos. Realizamos un estudio de experimentaci\u00f3n animal con los siguientes objetivos primarios:1. Determinar el efecto \u00abin vivo\u00bb de una dieta pobre en cr, no enriquecida con hidratos de carbono, grasas ni otros minerales, en ratones suizos (of1). 2. Determinar los mecanismos mediante el cual el cr act\u00faa sobre la secreci\u00f3n de insulina por la c\u00e9lula beta pancre\u00e1tica. C\u00f3mo objetivo secundario determinamos si una dieta equilibrada es capaz de restablecer los signos de deficiencia de cr en ratones suizos (of1). Completamos el trabajo con un estudio cl\u00ednico con los siguientes objetivos: 1. Determinar la ingesta de cr en nuestra  poblaci\u00f3n y su relaci\u00f3n con sus niveles plasm\u00e1ticos. 2. Relacionar los niveles plasm\u00e1ticos de cr con la existencia de insulinorresistencia cl\u00ednica. 3. Relacionar la ingesta de cr con la existencia de insulinorresistencia cl\u00ednica. 4. Establecer un marcador cl\u00ednico de deficiencia de cr. Conclusiones: 1. Una dieta baja en cr durante al menos 12 semanas produce aumento de la sensibilidad a la glucosa en la c\u00e9lula beta pancre\u00e1tica y aumento de la secreci\u00f3n pancre\u00e1tica de insulina. 2.
