Su composici\u00f3n qu\u00edmica consiste en unidades de d-glucosa unidas mediante enlaces b-1,4-glicos\u00eddicos formando largas cadenas polim\u00e9ricas. Estas cadenas se unen entre s\u00ed a lo largo de toda su longitud por enlaces de hidr\u00f3geno y fuerzas de van der waals, se orientan  paralelamente y poseen un extremo reductor y otro no reductor. La estructura de la celulosa no es uniforme de manera que posee regiones altamente cristalinas y otras amorfas o menos ordenadas.  la degradaci\u00f3n de la celulosa por los organismos vivos tiene lugar mediante la acci\u00f3n de tres tipos de enzimas: endoglucanasas (e.C.3.2.1.4), celobiohidrolasas (e.C.3.2.1.91) y b-glucosidasas (e.C.3.2.1.21). Todas ellas hidrolizan enlaces b-1,4-glicos\u00eddicos; pero var\u00edan en la especificidad de sustrato. las endoglucanasas atacan los enlaces b-1,4-glicos\u00eddicos dentro de la mol\u00e9cula de celulosa, las celobiohidrolasas act\u00faan liberando unidades de celobiosa a partir de los extremos de las cadenas de celulosa y las b-glucosidasas hidrolizan las mol\u00e9culas de celobiosa dando glucosa como producto final.  dentro de las celobiohidrolasas, se distinguen dos tipos: celobiohidrolasas de tipo i (cbh i) y celobiohidrolasas de tipo ii (cbh ii), que se diferencian en su especificidad por el extremo de la mol\u00e9cula de celulosa que atacan. mientras las cbh i act\u00faan sobre los extremos reductores, las cbh ii liberan unidades de celobiosa a partir de los extremos no reductores.  mediante la b\u00fasqueda en una genoteca gen\u00f3mica del basidiomiceto pleurotus ostreatus var. Florida, se han podido aislar cinco genes cbhi, que se han denominado cbhi1, cbhi2, cbhi3, cbhi4, cbhi5, cuya expresi\u00f3n dar\u00eda lugar a diferentes celobiohidrolasas i, lo que demuestra la existencia de una familia multig\u00e9nica responsable de dicha actividad  enzim\u00e1tica.
