Se utilizanron m\u00e9todos oficiales de an\u00e1lisis  para la mayor parte de los par\u00e1metros y se optimiz\u00f3 un m\u00e9todo para la determinaci\u00f3n cromatogr\u00e1fica de polifenoles  el primer apartado de la tesis comparalos resultados obtenidos entre pl\u00e1tanos de tenerife y  ecuador. A continuaci\u00f3n se estudia la influencia de factores tales como el m\u00e9todo de cultivo, ubicaci\u00f3n del cultivo y regi\u00f3n de producci\u00f3n. en los apartados siguientes se eval\u00faa la contribuci\u00f3n a la ingesta por el consumo de pl\u00e1tanos, la composici\u00f3n qu\u00edmica de las diferentes partes de  la pulpa,  y los cambios producidos durante la maduraci\u00f3n.
