Virginia <\/strong><\/h2>\n<p>En la presente memoria de tesis doctoral se han estimado distintos par\u00e1metros de calidad de la canal y de la carne de terneros a\u00f1ojos de raza pirenaica a partir de medidas r\u00e1pidas y objetivas de color sobre la canal, para contribuir a la mejora del sistema de clasificaci\u00f3n de las canales vacunas en par\u00e1metros relacionados con la calidad de la carne.  para ello, se han empleado 282 animales machos de raza pirenaica sacrificados con un promedio de 508+-51 kg de peso vivo y 366+-23 d\u00edas de vida, representativos de la poblaci\u00f3nactualde canales de terneros tipo a\u00f1ojo de raza pirenaica, seg\u00fan datos publicados por la asociaci\u00f3n de criadores de esta  raza. En la cadena de sacrificio se tomaron las notas de conformaci\u00f3n y de engrasamiento (sistema de clasificaci\u00f3n de canales de la uni\u00f3n europea o sistema seurop), el peso de la canal fr\u00eda y el color visual del m\u00fasculo latissimus dorsi. Las coordenadas colorim\u00e9tricas de los m\u00fasculos latissimus dorsi y rectus abdominis fueron medidas con un espectrocolor\u00edmetro (a:400-700 nm, a: 10 nm, d65, 10\u00c2\u00b0)a los 45 min y a las 24 horas postmortem.  de este grupo de animales se eligi\u00f3 al azar un subgrupo de 60 canales que para llevar a cabo un estudio amplio de la calidad de la carne. A las 24 h postmortem, se extrajo el m\u00fasculo longissimus dorsi comprendido entre las costillas 6 y 12 de la media canal izquierda y fue evaluado el color de forma  visual. Posteriormente, el m\u00fasculo fue seccionado en filetes que permanecieron envasados a vac\u00edo durante distintos periodos de maduraci\u00f3n.
