Hay una introducci\u00f3n general sobre las proteasas y tres capitulos en los que se hace referencia al estudio de las mismas en los tres microorganismos por separado.  las proteasas son enzimas degradativos que catalizan la ruptura de los enlaces pept\u00eddicos de las proteinas. Aparecen en una amplia variedad de fuentes naturales tales como animales, plantas, microorganismos, protozoos y virus. El estudio de las proteasas microbianas est\u00e1 incrementando debido a su importancia en la aplicaci\u00f3n industrial y biotecnol\u00f3gica. El objetivo general de este trabajo es la b\u00fasquedo de microorganismos productores de proteasas con potencial aplicaci\u00f3n industrial.  bas\u00e1ndonos en la capacidad de candida caseinolytica de producir una proteasa de inter\u00e9s biotecnol\u00f3gico nos planteamos su purificaci\u00f3n y caracterizaci\u00f3n, el estudio del crecimiento celular y optimizaci\u00f3n de su producci\u00f3n en un fermentador industrial y su aplicaci\u00f3n en la digesti\u00f3n de restos de pescado. tras la realizaci\u00f3n de los experimentos dise\u00f1ados para tales fines, llegamos a las siguientes conclusiones:  candida caseinolytica produce una enzima con actividad caseinolitica de 35 kda de peso molecular con una temperatura \u00f3ptima de 30\u00c2\u00b0c y un amplio rango de ph \u00f3ptimo.  los resultados del escalado en un fermentador de 20 l de capacidad demostraron que su aplicaci\u00f3n industrial es factible.  mediante el an\u00e1lisis por hplc de las muestras obtenidas tras la digesti\u00f3n de restos proteicos de pescado con el concentrado enzim\u00e1tico se concluye que se trata de una endopeptidasa.  yarrowia lipolytica secreta altos niveles de enzimas extracelulares. La proteasa mejor estudiada es la proteasa alcalina extracelular (aep) que esta codificada por el gen xpr2.
