Se ha demostrado que las 1,3-beta-glucanasas est\u00e1n implicadas en procesos de reactividad cruzada entre p\u00f3lenes, alimentos vegetales y frutas y se ha establecido con modelo de rat\u00f3n al\u00e9rgico a ole e 9 en el que se ha ensayado un tratamiento profil\u00e1ctico con los fragmentos recombinantes. adem\u00e1s se ha iniciado un estudio de mapeo epit\u00f3pico del c-terminal de ole e 9 y se ha analizado la relevancia cl\u00ednica de ambos dominios recombinantes.  por otro lado, se ha producido la forma precursora de sin a 1, alergeno principal de mostaza amarilla, en la levadura p.Pastoris lo que ha permitido analizar sus propiedades estructurales e inmunol\u00f3gicas y compararlas con las de la forma natural. Este estudio ha permitido proponer que la prote\u00edna recombinante podr\u00eda ser utilizada como marcador de sensibilizaci\u00f3n a mostaza. adem\u00e1s se ha aislado e identificado un nuevo alergeno de mostaza de alto peso molecular. Se trata de una globulina 11s, denominada sin a 2, que se ha caracterizado estructural e inmunol\u00f3gicamente. Finalmente, se ha clonado el cdna que codifica para sin a 2 y analizado las propiedades de dicha secuencia.<\/p>\n<p>&nbsp;<\/p>\n<h3>Datos acad\u00e9micos de la tesis doctoral
