Lourdes <\/strong><\/h2>\n<p>Se controlan los pigmentos clorofilicos y carotenoides presentes en la aceituna gordal durante todo el ciclo evolutivo del fruto, al objeto de conocer si permanecen en el mismo, intermediarios biosinteticos coloreados que puedan propiciar la alteracion \u00abmancha verde\u00bb en el fruto elaborado. En todo momento estan presentes los tipicos pigmentos cloroplasticos clorofilas a y b, en la fraccion clorofilica, y luteina b-caroteno, neoxanteno, violaxanteno y anteraxanteno, en la fraccion carotenoide.  se deduce, asi mismo, que la enzima clorofilasa interviene en la sintesis de clorofilas. Se estudian las transformaciones que se producen en los compuestos clorofilicos y carotenoides durante el procesado de los frutos como aceitunas verdes de mesa, encontrandose grandes diferencias con las modificaciones que tienen lugar en otras variedades de aceitunas sometidas al mismo proceso. Se han identificado nuevos compuestos, llamados mg-clorinae6-fitol y mg-rodina g7-fitol, que se transforman posteriormente en clorina e6-fitol y rodina g7-fitol.
