{"id":74170,"date":"2018-03-09T23:19:11","date_gmt":"2018-03-09T23:19:11","guid":{"rendered":"https:\/\/www.deberes.net\/tesis\/sin-categoria\/envasado-activo-de-fresas-silvestres\/"},"modified":"2018-03-09T23:19:11","modified_gmt":"2018-03-09T23:19:11","slug":"envasado-activo-de-fresas-silvestres","status":"publish","type":"post","link":"https:\/\/www.deberes.net\/tesis\/ciencias-tecnologicas\/envasado-activo-de-fresas-silvestres\/","title":{"rendered":"Envasado activo de fresas silvestres."},"content":{"rendered":"<h2>Tesis doctoral de <strong>  Almenar Rosaleny Eva Mar\u00eda <\/strong><\/h2>\n<p>La comercializaci\u00f3n de fresas en fresco plantea problemas, debido a la elevada velocidad de respiraci\u00f3n que presentan estos frutos, y a su extremada fragilidad, que impide tratamientos efectivos de limpieza despu\u00e9s de la recolecci\u00f3n, por lo que es inevitable la presencia de hongos que limitan significativamente el periodo de comercializaci\u00f3n.  el objetivo de esta tesis es desarrollar un sistema de envasado activo para prolongar la vida \u00fatil de fresas silvestres, basado en t\u00e9cnicas de atm\u00f3sfera modificada, para reducir la cin\u00e9tica de respiraci\u00f3n post-recolecci\u00f3n y la incorporaci\u00f3n de elementos activos para disminuir la incidencia de hongos durante el almacenamiento y distribuci\u00f3n comercial.  se estudia inicialmente los materiales de envase y las condiciones de envasado m\u00e1s adecuadas para conseguir una atm\u00f3sfera modificada en equilibrio con las concentraciones de di\u00f3xido de carbono y de ox\u00edgeno m\u00e1s adecuadas para la conservaci\u00f3n de la fresa. Con esta tecnolog\u00eda de envasado se consigue una cierta mejora de la vida \u00fatil del producto, pero no suficiente para mantener los par\u00e1metros de calidad del fruto durante un periodo de comercializaci\u00f3n deseable. La alternativa desarrollada ha sido la incorporaci\u00f3n en el interior del envase de un sistema de emisi\u00f3n de sustancias con capacidad antif\u00fangica con el que controlar el crecimiento del hongo botrytis cinerea y retrasar la velocidad del metabolismo del fruto. Se han estudiado distintas alternativas con sustancias antif\u00fangicas presentes de forma natural en las fresas, as\u00ed como los posibles sistemas de aplicaci\u00f3n pr\u00e1ctica. Los mejores resultados se han obtenido con la adici\u00f3n de 2-nonanona, sustancia presente de forma natural en el aroma de la fresa, inocua para la salud del consumidor.  as\u00ed mismo se ha estudiado la modelizaci\u00f3n de los mecanismos de transporte de masa presentados por este sistema activo, lo cual permite estimar con buena aproximaci\u00f3n las
