Una parte importante de estos residuos est\u00e1 constituido por compuestos fen\u00f3licos y el creciente inter\u00e9s en la sustituci\u00f3n de compuestos sint\u00e9ticos en la industria alimentaria por compuestos procedentes de fuentes naturales, ha aumentado el inter\u00e9s por las investigaciones. as\u00ed el residuo prensado de la vinificaci\u00f3n es una fuente abundante y barata de pigmentos antoci\u00e1nicos (enoncianina), los taninos de los hollejos pueden ser utilizados en enolog\u00eda y adem\u00e1s los compuestos fen\u00f3licos tiene un demostrado efecto positivo sobre la salud, se consideran como componentes bioactivos debido a las propiedades antioxidantes que presentan pudi\u00e9ndose ser utilizados como aditivos alimenticios antioxidantes. La composici\u00f3n fen\u00f3lica se puede utilizar como criterio en la diferenciaci\u00f3n varietal.  se estudia el potencial fen\u00f3lico de once extractos de hollejos procedentes de variedades de uva cultivadas en castilla- la mancha: cabernet franc, cabernet sauvignon, cencibel, garnacha tinta, garnacha tintorera, merlot monastreel, air\u00e9n, chardonnay, macabaeo y moscatel grano menudo.  la variedad garnacha tintorera es la que se puede considerar como la m\u00e1s apropiada para la obtenci\u00f3n de extractos ricos en antocianinas, extractos antioxidantes y es una buena fuente de obtenci\u00f3n de taninos para su uso en enolog\u00eda.  la combinaci\u00f3n de los distintos par\u00e1metros analizados como variables en el an\u00e1lisis discriminante permite la diferenciaci\u00f3n
